Zearalenone (ZEN), also known as F-2 toxin, is a mycotoxin mainly produced by Fusarium species. It primarily contaminates cereals such as corn, wheat, rice, barley, millet, and oats. Zearalenone is heat-stable and can only be completely destroyed after treatment at 110°C for 1 hour.

Chemically, zearalenone is a phenolic lactone derivative of dihydroxybenzoic acid with the molecular formula C₁₈H₂₂O₅. It is insoluble in water, carbon disulfide, and carbon tetrachloride, but soluble in alkaline aqueous solutions, ether, benzene, chloroform, dichloromethane, ethyl acetate, and acids, and slightly soluble in petroleum ether.

Zearalenone exhibits estrogenic activity, approximately one-tenth that of natural estrogen, and can elevate estrogen levels in poultry and livestock. Pigs are known to be particularly sensitive to this toxin. Zearalenone primarily affects the reproductive system of female animals, but it also exerts certain effects on males. In cases of acute poisoning, it can cause toxicity to the nervous system, heart, kidneys, liver, and lungs. Its main mechanism involves overstimulation of the nervous system and hemorrhagic lesions in internal organs, which may lead to sudden death in animals.
